Ingredients
For Sponge
- Self raising flour 170 g
- Unsalted Butter 170 g
- Caster Sugar 170 g
- Eggs 3
- Vanilla extract 1 tsp
- Baking powder 1-1/2 tsp
For Butter Cream
- Unsalted butter 100 g
- Icing sugar 150 g
- Vanilla extract 1 tsp
- Milk 2 tsp
Other
- Strawberry Jam as required
- Fresh strawberries as required
Directions
- Preheat the oven on 160 C. Take 2 round pans of 6 inch.
grease them and then line them with parchment paper. Set a side. - In a bowl add room temperature butter and caster sugar.
- Beat until fluffy for 1-2 minutes.
- Now start adding eggs 1 at a time and keep beating until mix.
- Sieve self raising flour and baking powder in it.
- Beat until mix well. Do not over mix.
- Pour the mixture evenly in 2 prepared pans.
- Bake for 25-27 minutes.
- Take out let them cool completely before baking.
- Now for butter cream beat room temperature butter for 1 minute then add sifted icing sugar and vanilla extract. Beat it until soft and fluffy. Now add milk and beat until mix.
- Fill the butter cream in a piping bag.
- Now place 1 cake layer spread jam on it.
- Pipe butter cream on it, place second layer of cake on it.
- Dust icing sugar on top, place some fresh strawberries on top.
