Preparing the Sea bass!
Once the fish has been scaled, gutted and cleaned, it is time to prepare the seabass for cooking. Start by rinsing the fish in cold water and patting it dry with a paper towel. Make sure to remove any remaining scales or pin bones from the flesh of the fish. Or just use store bought cleaned sea bass. Next, season both sides of the seabass with salt and pepper or I use nando’s sauce in this recipe. If desired, you can also add other herbs or spices like garlic powder or paprika for added flavor. Once seasoned, let it sit for 15-20 minutes so that the flavors can penetrate into the flesh of the fish. Finally, lightly coat each side of the seabass with flour before adding it to a hot skillet over medium heat.
Heating the Pan
Heat the pan over a medium-high heat for about 2 minutes. Add a few tablespoons of vegetable oil, and swirl it around to coat the surface evenly. Wait until the oil is hot–you should see it shimmering on the surface of the pan. To test if the oil is hot enough, take a piece of seabass and place it in the middle of the pan. If you hear a sizzle sound, then you know that your oil is ready to use. Make sure to move your fish around gently so that both sides can cook evenly. Once both sides are golden brown, remove from heat and set aside onto a paper towel-lined plate or baking tray. For added flavor, you can add herbs like parsley or dill right before taking off heat for extra seasoning!
Placing the Fish
Once the pan is hot, it’s time to place the fish. When placing the fish in the pan, make sure that it is laid flat on its skin side first and be careful not to overcrowd or they will steam instead of fry. Once the fish has been placed in the pan, let it cook undisturbed for around two minutes or until golden brown. If you’re worried about flipping it, use a thin spatula to loosen any edges that may be sticking to avoid tearing delicate skin when turning over. Additionally, if you’re cooking more than one seabass at a time then space them out evenly in order to ensure even cooking on both sides of each piece of fish.
Cooking Time & Temperature for Sea bass!
The key to panfrying seabass is to get the proper cooking time and temperature. To ensure the fish cooks evenly, it’s important to preheat the skillet on medium-high heat until a drop of water sizzles on contact. Place each fillet in the pan and cook for 3-4 minutes, flipping once during that time. When properly cooked, the fish should be golden brown and slightly crisp on both sides; it should also flake easily when tested with a fork. Be sure to turn off the heat immediately after removing from skillet so as not to overcook!
Toppings & Seasonings for Sea bass!
When it comes to pan-frying a seabass, the toppings and seasonings you choose can really take the flavor to the next level. A good rule of thumb is to always start with a light seasoning of salt and pepper on each side of the fish. This will help enhance its natural flavors. For added depth of flavor, you could also add some herbs and spices such as garlic powder, paprika, dill or cumin. If you’re looking for something sweet and nutty, crushed almonds or pine nuts are a great choice as well. You can also top your seabass with slices of lemon for an extra zingy citrus kick or some capers for briny notes. Finally, adding some butter to your pan while frying will give it an even richer taste.
Serving Suggestions
For added flavor, sprinkle some peri peri spice on top like I did or sprinkle any spice of your choice like Cajon or chat masala.
I paired it with crispy potatoes and fresh salad of rocket and cucumber. You can also pair this dish with roasted vegetables like broccoli, asparagus or carrots tossed with olive oil and herbs such as rosemary or thyme. Or serve it alongside mashed potatoes, wild rice pilaf or couscous for a heartier meal option!

2 tbsp Nando’s sauce

Plain flour as required

Directions
- Pat dry your clean fish. Marinate it with Nando’s sauce.
- Coat with plain flour both sides.
- Heat a pan, add in 3-4 tbsp. oil. Place the fish skin side down. Cook for 3-4 minutes.
- Flip the fish and cook the other side for 2-3 minutes.
- Serve hot with rocket and cucumber salad and air fried crispy potatoes. Sprinkle some peri peri seasoning for extra taste.
